There are two reasons for thin waist (thin board, actually) design that I can think of:

1. As mentioned before -- faster transitions between turns, faster response.

2. Also, it is easier to manufacture a board with highest torsional stiffness and without effecting longitudinal stiffness, if the board is thin. The thicker the board the more negative effect it is going to have for torsional stiffness.
